Broccoli Salad
During our long-distance house-hunting trips, and then moving, we had a difficult time having vegetables and salads. So, one of the first dishes we made in our new house was this Easy Broccoli Salad Recipe. This Salad is fabulous and one of our family favorites. We always make this recipe for Thanksgiving and Christmas. We thought now is a great time to make the broccoli salad to share with all our virtual friends. This is a recipe that can be made a few days ahead of time. It actually gets better after a few days. And it is always a huge hit with everyone!!!

Key Takeaways

- Unlike traditional recipes, this salad uses Cream Cheese instead of mayonnaise, significantly reducing the calorie count.
- To make the salad, mix broccoli, purple onion, cream cheese, vinegar, and other seasonings, and refrigerate before serving.
- You can choose to top it with sunflower seeds or bacon, but it’s delicious even without bacon.
Making this Easy Broccoli Salad
The majority of Broccoli Salads have Mayonnaise as the primary ingredient. Instead, this Salad uses Cream Cheese which adds a nice flavor and the apple cider gives it a really fun zip. Also, the calorie difference is crazy! For the Mayonnaise salad, there is approximately 1495 calories. This Easy Salad uses Cream Cheese, which cuts the calories to 776!!!! Basically, for 6 servings this salad (without the bacon!) is 129 calories per serving compared to 250 calories for the mayonnaise. For that amount of savings, you can have two, yes TWO, servings of this salad!!! Oh, and you are going to want two or three servings. YES!!! it's that yummy!
Steps for making this easy Broccoli Salad
- Cut the broccoli into small bite-size florets
- Chop a Purple Onion (gives nice color and crunch to the salad)
- Mix together Cream Cheese, Vinegar, Onion powder, Dijon mustard, salt, and Sugar
- Mix together the Broccoli florets, onion, and Craisins
- Pour the Cream Cheese mixture over the Broccoli and mix well
- Refrigerate for at least an hour. This is actually better if made a day or two ahead of time. This gives the broccoli a chance to absorb the dressing which pumps up the flavor in the salad even more.
- Prior to serving sprinkle on Sunflower seeds or crispy bacon or bacon bits

If you are a vegetarian leave off the bacon. This salad is amazing without bacon.
