It's Springtime, and I'm thrilled for many reasons, but the primary reason is that we can finally enjoy fresh (or fresher) tomatoes, cilantro, and jalapeños. Pico de Gallo is our favorite dish to make with these fresh ingredients. It's a chunky fresh salsa that tastes so good and is perfect with corn chips. Did you know that Pico de Gallo means "beak of the rooster"? It's uncertain how it got this name, but it could be related to how chickens eat. The recipe below is a classic version of Pico de Gallo that you can adjust to your liking by adding more or fewer Jalapeños or substituting them with Serrano Peppers to make it spicier. I used to make two batches, one with Jalapeños for myself and another without peppers for Amy (and the other reason for the two batches goes back to that double dipping issue, HaHa). If you don't like Cilantro, you can substitute Parsley instead.

To make a tasty appetizer in just 15 minutes, pair this Pico de Gallo with homemade corn chips and Guacamole. Another fun salsa to try is the Habanero Pineapple Salsa, which goes well with salmon, pork, or chicken.

Breakfast Tip:
One of my favorite breakfasts is scrambled eggs with a little cheddar cheese. Take a flour tortilla, put a couple of tablespoons of salsa in the tortilla, and add the eggs. This is the best breakfast burrito ever!
