Healthy and Flavorful Thai Turkey Meatballs

Ingredients

  • 1/2 Cup Onion - Chopped
  • 1 Large Carrot (2/3 cup of shredded carrot)
  • 2 Cloves Garlic
  • 1 Tablespoon Lemongrass Paste
  • 1 Tablespoon Ginger
  • 2 Tablespoons Soy Sauce (Light Soy Sauce can substitute regular Soy Sauce)
  • 1 Tablespoon Lime Juice
  • 2 Tablespoons Cilantro
  • 1 Pound Ground Turkey

Instructions

  • Shred carrot, finely chop onion, chop garlic, chop ginger. Preheat oven to 400 degrees.
  • Mix together onion, carrot, garlic, lemongrass paste, ginger, soy sauce, lime juice, cilantro, and ground turkey.
  • Form turkey mixture into meatballs. Makes about 20 Meatballs
  • Air Fry - Spray the bottom of the air fryer basket with cooking spray.
    Place the meatballs in the air fryer and cook at 400 degrees for 7 minutes.
    Flip meatballs and cook for an additional 7 minutes at 400 degrees.
    Use a meat thermometer to make sure the meatballs are entirely cooked through
  • If Baking in Oven: Place Meatballs on a foil-lined baking sheet. Bake at 400 degrees for 25 minutes. Flip the meatballs and bake for an additional 10 minutes until the meatballs are entirely cooked through. You can use a meat thermometer to test the internal temperature of the meatball.
