Loaded Twice Baked Potato Bites

Crispy Twice Baked Potato Bites are loaded with creamy potatoes, crispy bacon, cheddar cheese, & zesty ranch, they're sure to please!

Ingredients

  • 12 Small Potatoes
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Coarse Salt
  • 1 1/2 Ounces Cheddar Cheese Grated
  • 2 Tablespoons Milk
  • 1/2 teaspoon Salt
  • 1 Tablespoon Ranch Seasoning
  • 1 Medium Onion Chopped
  • 1 Ounces Cheddar Cheese Grated
  • 2 Slices Bacon or use Bacon Bits

Instructions

  • Rinse off the potatoes and cut out any bad spots. Dry the potatoes with a paper towel.

  • Toss the potatoes with olive oil. Then toss in the coarse salt and coat the potatoes with the salt.

  • If Air Frying: Place the potatoes on the air fryer basket and cook at 400 degrees for 20 minutes or until the potatoes are done.
    If Baking: Place the potatoes on a baking sheet. Put in a preheated 375 degrees oven for 35 to 40 minutes until the potatoes are done.

  • You can tell that the potatoes are fully cooked when a fork can be easily inserted into them.

  • Allow the potatoes to cool for approximately 15 minutes. In the meantime, if you plan to prepare bacon, cook it while the potatoes cool. (If cooking bacon is not your preference, you can opt for pre-packaged bacon bits or simply exclude bacon from the recipe.)

  • After the potatoes cool, cut them in half.

  • With a spoon, scoop out the potatoes inside and place them in a mixing bowl. Be sure to leave a small border of potato in the skin.

  • If Air frying: Place the potato skins on the air fryer basket. Air Fry for 8 minutes at 400 degrees. Until the potato skins are crispy.
    If using the Oven: Place the potato skins on a baking sheet. Bake for 10 to 12 minutes in a 400-degree oven until the potato skins are crispy.

  • Using a hand mixer, combine the scooped-out potato, cheese, milk, salt, and ranch seasoning. Once mixed, add in the chopped onion, if desired.

  • When the potato skins are crispy, fill them with the potato mixture.

  • Place the potatoes back into the air fryer or oven.
    Air fry for 5 minutes at 400 degrees.
    Bake in the oven for 8 minutes at 400 degrees.

  • Sprinkle the additional cheese on the potatoes and place back in the air fryer or oven for 2 minutes until the cheese melts. They can be placed under the broiler, but make sure to keep an eye on them so they don't burn.
    1 Ounces Cheddar Cheese
  • Top with Bacon, Jalapeno, and/or green onion (All are optional)
    2 Slices Bacon or use Bacon Bits
